Reheats well if made in advance. Pesto croûtons can be used to add flavour and crunch to salads - try grated carrot, chopped celery, torn rocket and pesto croûtons with a simple dressing.

- Mix 2 dessertspoons pesto and 1 dessertspoon olive oil together, spread on slice of bread and cut into small squares.
- Use a large non-stick frying pan or line an ordinary frying pan with non-stick liner. Tip in the squares and spread out to form a single layer.
- Bake on the floor of the TOP OVEN for 25 minutes until crisp.
